Bread with olives


The bread with olives is not a Hungarian speciality, but the olives are very popular in Hungary, we like it very much (except my husband).
My mother in low had spent a few days in Northern Italy and she brought us this bread. It was delicious :).

Strawberry cake


Happy 10th birthday to my son!



Recipe of my strawberry cake:

Ingredeients for the cake:
  6 egg
  300 g flour
  350 g sugar
  6 tbs hot water
juice of a half lemon
1 little pack baking powder

Ingredients for the cream:
 250 g mascarpone cream 
175  gram yogurt
750 gram strawberry
icing sugar (to taste)
Prepare:

I. Bake the cake layers:

1. Mix yolks with sugar, add the 6 tbs water and mix.
2. Add the lemon juice, the flour and the baking powder and mix well.
3. Add the whipped white of eggs. Then put the mass into the cake form.
4. Bake at 180 Celsius preheated oven, for 35-40 minutes.


 II. Create the creams:
1. Mash the  straberries (500g) and mix with the other inredients (yogurt, mascarpone and icing sugar)

III. Create the cake and decorate with strawberries! (as you can see in the picture)

Fasírt (Hungarian meatball)

Fasírt is a Hungarian meatball which is made from ground meat (most often pork), bread, eggs, onions and garlic and flavored with paprika, black pepper and salt. The fasírt is then fried in fat or oil and serve with creamed vegetable dishes such as Creamed Spinach, Creamed Squash or or mashed potatos and pickled vegetables. 

My fasírt recipie:

Ingredients:
  • 1/2 kg minced pork or turkey meat
  •  one egg two slices of bread soaked in water
  •  1/4 grated onion
  •  3 cloves grated garlic salt, black pepper and red paprika powder to taste
  •  bread crumbs

Preparation:
  • Mix well the ingredients. 
  • Make meat balls. 
  • Turn the meat balls in bread crumbs. 
  • Freid in hot oil  and serve!

Chocolate Cake

My daughter has requested an chocolate cake with marzipan for her 8th birthday. I bought marzipan dough (gyurmarci) and she made the marzipan figures :)

Recipe of the chocolate cake:


Ingredeients for the cake:

8 egg
400 g flour
50o g sugar
8 tbs hot water
juice of a half lemon
1 little pack baking powder


Ingredients for the cream:
 2 packs of chocolate pudding powder
1 tsp flour
1/2 liter tej
a few blocks of chocolate (to taste)
1 egg yolk
12,5 dkg butter (or margarin)
20 dkg icing sugar

Prepare:


I. Bake the cake layers:


1. Mix yolks with sugar, add the 8 tbs water and mix.
2. Add the lemon juice, the flour and the baking powder and mix well.
3. Add the whipped white of eggs. Then put the mass into the cake form.
4. Bake at 180 Celsius preheated oven, for 35-40 minutes.
 II. Create the creams:


1. Mix the yolk with pudding powder with the yolk and milk and cook.
2.  Mix the butter with the icing sugar.
3. Whent the pudding is cold mix with butter cream.


III. Create and decorate the cake!

The oroginal "ischler"


ischler

"Ischler" or "isler" is a very popular "cake" in Hungary, but it originates from Austria. This cake is named after the town of Bad Ischl., because in 1849 Karl Franz's son, Emperor Franz Joseph I of Austria chose this town for his summer residence and at the first time here was prepared this delicious cake for him, which later had become one of his favorite dessert.

Cake with cottage cheese

túrós Ingredients:

  • 25dkg (1/4 kilo) cottage cheese 25 dkg sugar
  • 5 dkg soft margarine or butter
  • ¼ liter milk
  • 4 dkg cocoa powder
  • 25 dkg flour
  • 1 packet of baking powder
Ingredients for the cottage cream:
  • 25dkg (1/4 kilo) cottage cheese
  • 4 tablespoons sour cream,
  • 4 tabelspoon sugar
  • ½ packet of vanilla pudding powder
  • 1 bag of vanilla sugar
Preparation:
  • Mix the flour with baking powder.
  • Add to other ingredients and stir until smooth.
  • Line baking pan with baking paper and put tha mass into it.
  • Put the ingredients of the cottage cheese cream in a mixing bow and mix well until it becomes creamy.
  • Put the cottage cheese cream in a plastic sandwich bag and cut off a small piece of the corner of the bag. Press trough this small hole the cottage cheese cream, decorate with the cake as you can see in the picture.
  • Put in preheated oven and bake at 200 ° C for 40 minutes.

Fresh spring salad with wild garlic

Ingredients:
  • 1 pack of radish
  • 1 green lettuce
  • 1 cucumber
  • 2 dl yogurt or source cream
  • olive oil (little)
  • salt
  • chopped wild garlic
  • half juice of lemon (or to taste)
Mix the ingredients, let stand in the refirgerator for 40 minutes and serv for lunch with grilled meat!

Easter Braided Bread Wreath

The braided bread should not be missing from the traditional Hungarian Easter table :)

Ingredients:

50 dkg flour, 2 dl milk, 10 dkg sugar, 2,5 dkg fresh cake yeast, 2 teaspoon salt, 1 egg, 6 dkg soft butter, + 1 egg yolk for lubrication

Preaper:

1. Crumble the yeast into the milk.
2. Mix the flour with the sugar, melted butter, salt and egg, then add the yeast milk mixture.
3. Cover and let rise for one and a half hours.
4. Divide the dough into three equal pieces and roll three "sausage", cover them and again let "rest" 15 minutes.
5. Finally braid the dough strips and make wreath as in the picture and place the wreath on a cake form lined with baking paper.
6. Cover it again and put into the 70 ° C oven and let the dough rise until doubled in size.
7. Heat the oven to 150-180 ° C. After 15 minutes baking, anoint the top with egg yolks and remaining milk mixture.
8. During (the approx.) 40-50 minutes of baking time twice or even two or three times anoint the top of the wreath.

Wild garlic scones

Ingredients:

50 dkg flour, 2 dkg fresh cake yeast, 2 dl milk, 2 teaspoon sugar, 2 egg, 25 dkg butter, 2dl source cream, salt to taste, sesame seeds and chopped wild garlic

Prepare:

1. Mix and knead the ingredients (flour, cake yeast, milk, sugar, salt, egg, source cream and butter) in the bread baker. Then let the dough rise about an hour.

2. Flour the board and add the chopped wild garlic in the doguh and Knead well. Then roll out thin the dough and cut scone forms.

3. Smear the top of the pastry with yolk and sprinkle with grated cheese or sesame seeds.
4. Bake in preheated oven about at 180 Celsius for 25 minutes.

5. Serve and enjoy! :)

Wild garlic

Ramsons, Allium ursinum — also known as buckrams, wild garlic, broad-leaved garlic, wood garlic, bear leek, and bear's garlic — is a wild relative of chives native to Europe and Asia. medvehagyma szőnyeg

Allium ursinum, ramsons, grow in deciduous woodlands with moist soils, preferring slightly acidic conditions. They flower before deciduous trees leaf in the spring, filling the air with their characteristic garlic-like scent. The stem is triangular in shape and the leaves are similar to those of the lily of the valley.

Ramsons leaves are edible; they can be used as salad, spice, boiled as a vegetable, in soup, or as an ingredient for pesto in lieu of basil. Ramsons leaves are easily mistaken for lily of the valley, sometimes also those of Colchicum autumnale and Arum maculatum. All three are poisonous and possibly deadly. A good means of positively identifying ramsons is grinding the leaves between one's fingers, which should produce a garlic-like smell. When the leaves of ramsons and Arum maculatum first sprout they look similar, however unfolded Arum maculatum leaves have irregular edges and many deep veins while ramsons leaves are convex with a single main vein. We usually only eat until they start to bloom, because after floweing they become bitter. In early April a real "wild garlic carpet" is covered the bottom of the forest in Gerecse, Mecsek Hills.

Hungarian "sörkifli"

Sörkifli "Beer crescent roll"

Ingredients

for the dough:
50 dkg flour, 5 dkg fresh cake yeast, 3 dl milk, 1 tablespoon sugar, 2 café spoon salt, 1 egg, 1,5 dl oil, 2-3 spoon source cream
+ one egg and soft butter

Prepare:

1. Mix and knead the ingredients (flour, cake yeast, milk, sugar, salt, egg, source cream and oil) in the bread baker. Then let the dough rise about an hour.

2. Flour the board and divide the dough into 4 pieces, knead 4 loaves, then roll out thin these "small balls " and cut 8 parts.

3. Smear the pastry with melted butter and and roll up like on the picture.

4. Smear the top of the pastry with yolk and sprinkle with grated cheese or sesame seeds.

5. Bake in preheated oven about at 200 Celsius for 15-20 minutes.

6. Serve with beer :) and enjoy!

"Meggyes - vaníliás papucs"

Pastry with vanilla pudding and sour cherry

Ingredients for my "meggyes vaníliás papucs":

for the dough:
50 dkg flour, 5 dkg soft butter, 2,5 dkg fresh cake yeast, 2,5 dl milk, 2 dkg sugar, 1 café spoon salt

for the filling:
20 dkg sour cherry, 3 tbs sugar, 1 pack vanilla pudding, 4 dl milk
+ one egg

Prepare:

1. Mix and knead the ingredients in the bread baker, or if you haven't got bread baker, than mix yeast and 1 tbs sugar in lukewarm milk. Let stand until other ingredients are mixed. Mix the butter with yeast mixture. Add flour and knead well and let rise for an hour in warm place.

2. Cook the vanilla pudding according to the direction.

3. Flour the board and roll out thin the dough and cut square and place 1-1 tbs pudding in the middle of the squares and create the forms, and put sour cherries in the middle of pudding, like on the pictures. Use greaseproof paper and place the forms into the tin.

4. Smear the pastry with yolk.

5. Bake in preheated oven about at 170 Celsius for 25 minutes.

6. Serve and enjoy!

Kugelhopf with sour cherry and chocolate

1 egg
15 dkg butter
15 dkg sugar
30 dkg flour
1 dl milk 10 dkg sour cream
1 or 2 tsp baking powder
1/2 l conserve sour cherry
10 dkg chocolate

Prepare:
1. Mix the ingredients (except chocolate and sour cherry)
2. Then put half of the mass into the form and put half of the sour cherry and chocolate in.
3. Repeat the previous step.
4. Bake at 160-170 Celsius, for 45 minutes.
